Sometimes if they stick in my head. I've written down a lot of passages from the Hitchhikers Guide to the Galaxy but that's mainly cos they're so funny.
But there are some special quotes I really like from my favourite books like Harry Potter and Eragon.
My all-time favorite quote is R-rated, otherwise I would post it here. From the book House of Leaves by Mark Z Danielewski. Talks about the etymology of a certain swear word.
I always have a pretty little notebook handy so I can write down any particularily noteworthy passages. If I am reading several books on a certain topic, I get a notebook just for that.
i'm always writing down passages and quotes i like. when i read Kerouac, in particular, i start writing things down and then generally find that i want to just record the entire book haha.
I try to remember them, but I'll also write them down. I use to have a whole notebook where I wrote down quotes I really liked. Unfortunately I lost it when we moved. :(
Mostly I just bookmark them or underline them in pencil. In my copy of Titus Groan I have marked my favourite pages/passages/descriptions etc, it looks all ratty but I love it so much.
If it's not like, a whole chapter then I'll memorize. Even if memorized I'll fold down the page corner and maybe underline or highlight. And I write them down anywhere I can.
They're all on my fanfiction profile...I try to memorize the really good ones, but I have the memory of a goldfish who was dropped on its head too many times.
Sometimes i write them down and sometimes i memorize them i find all sorts of quotes like this one i got from a war genre book: Venimus, vidimus, vicimus meaning we came we saw we conquered another i don't remember where i read it but its one of my favorites it goes: Though I'm always in a hurry i never rush
If they're important enough I'll remember them like{from New Moon the movie} Jessica: So what you're an adreniline junkee now? fine. Go bungee jumping or something. Don't get on the back of some random loser's motorcycle.
According to people I know, it's a really stupid thing to do, but I still do it! I write them on my desk in permanent marker...(my mom freaks out!) Then I memorise them and use them in my English answers or speeches!!! They always impress my teacher!!!

Zweig and " Murder Most Royal " by V. Holt . Usually I memorize the plot of the books very well that's why I don't write down quotes or passages.
