This series had me in bittersweet tears by the end (there are two seasons). It's a great "slice of life" series without magic or robots. Just very well developed (and some quirky) characters. And I don't mean "well-developed" like "big bossomed" characters either! ;-)

If you like the same kind of episodes over and over again (but slightly funny) go for Inuyasha. If you're in for something emotional and drama like, go for Honey & Clover. Bleach is more of an action type of anime.

Ranma ½ is my favorite Anime! Downside of it: contains some nudity here & there, but other than that it is a riot!

Honestly it depends on what type of anime you like but I GREATLY recommend FRUITS BASKET

Gundam is a great drama with a fair amount of mecha action; I highly recommend it. You will have difficulty finding it in any language other than Japanese, however, as the series has not been released for sale in the English-speaking world. Check with your local anime clubs for people who will have good subbed versions.

Bebop is pretty much required watching, and it should be--it's brilliant and consistently voted as one of the best animes ever. XXXHolic, Sailor Moon and Ranma are good too, though.

I used to hate anime with a burning passion...until Fullmetal Alchemist converted me. Now I know there's at least ONE anime out there with great voice acting, great music, great storytelling, thoughtful themes, good pacing, and characters that you can truly cry and care about. (Seriously, some parts made me teary-eyed...and my mom, too.)

Rozen Maiden has to be my favorite anime. It's by Peach-Pit, who also did DearS, Shugo Chara!, and Zombie Loan. It's about these dolls, called Rozen Maidens, that, when they are wound up, they can move like a human would. These dolls have to fight and win the Alice Game to become the perfect girl. It's a very good series. ^^

That's a lot of anime. The best of the list (those i've seen) are : Fate stay night, Black cat, Burst Angel, Tokyo mew mew, hell girl and of course BLACK LAGOON ! Twin Beretta M92fs Cutless! And a Pontiac GTO!

honestly I reccomend both fate/stay night and spice and wolf series it because I love them both.

If you do watch the animes I picked then watch Ranma1/2 before Inuyasha. Halfway through ranma1/2 ranmas voice changes to richard ian cox's (voice of Inuyasha)and it totally ruins it if you've seen Inuyasha first.

BLEACH it has the coolest characters and great fighting scenes there are a few boring parts but after they end it gets back to the good parts

Deathnote, Bobobobobo, Azumanga Daioh, Lucky Star, SAYONARA ZETSUBOU SENSEI(All you reading this BETTER WATCH IT. It's my fav anime), Naruto, Bleach, and basically all the other things other people suggested. But really you should watch sayonara zetsubou sensei. It is AWESOME.
