Water isn't the opposite of fire. It isn't like an antidote. The only reason water extinguishes fire at all is because it deprives it of oxygen. If the flame has enough fuel, like for instance a stick covered in a cloth which has been emersed in oil, then it will not go out when splashed a bit with water, especially as this water is not a constant flow.
Look at it this way, the actors are not using prosthetic torches. The flames are not put there using special effects. The rain is not fake water. If the torches were going to go out, they would do so while filming and you would see it happening. Just because it's on TV, it doesn't mean it's fake.
Also what gets me is how fast people move on, like in The Other Woman, Kate's just left Sawyer, but he's laughing and joking with no reference to Kate. Juliet has known Jack for around a month, and just after Goodwin dies, and next thing you know, she's locking lips with the Doc. Also, no one seems to care that Charlie's dead.
