He didn't really know Mulan (who he thought was Ping) until the very end of the movie.. and even then he still didn't know her too well. After the events in the second movie, he would probably save Mulan.

He has great respect for his father and I don't really see Shang as someone who loves Mulan that much to offer his life for her, maybe for Ping.

Shang and Mulan's relationship is as such they have a real understanding for each other- Mulan would pick Fa Zhou over Shang, even after they were married. The point is, even though they love each other, their lives are dedicated to others. On principle, I really like their relationship.

I never saw him actually show any real passion for Mulan, but then again in the sequel he did let go so she could live. However I think he would save his father first.
