Just take a look at the british monarchie. All the grandchildren of Queen Elisabeth are considered Prince or Princesses, but only William will be king later on. Perhaps Eric's and the Beast's Cousin or Brother is the King.

Another explanation is that they are "Fürsten" - a "Fürst" is not the same as the son of a King, it's someone who rules over a "Fürstentum" (principality) as opposed to a "Königreich" (kingdom). Nevertheless, a "Fürst", especially in France, is considered a prince too, especially if there are some ties to royality, never mind how far removed.

I don't see hes parents there so, Belle is a Queen not a Princess.
That means that we got 2 queens and 2 Kings, "Snow White and Prince-Belle and Beast.

Actually some kingdoms just wait for their princes to marry a girl before they're crowned king. That's probably why he's considered a prince in the story and not king yet. That's probably the reason Eric was rushed into finding a bride. So three of the disney princesses are queens Ariel, Belle, and Snow White. Since her parents and step mother died she's the heir.
