In a simple way, the meaning you're probably looking for, is that a stalker is someone who follows someone around. Usually without the person knowing, and taking in information por observing the person's actions. They stalk them.

Someone who's so obsessed with you they'd follow you anywhere. He/she mostly has this fantasia about him/herself and the person he/she is stalking. At least that's what I've learnt from Criminal Minds :P
