Hmm...well I'd invite all the characters from Azumanga Daioh for a start, with the exception of Mr Kimura; the reason being that I'm not sure if any of the other characters would come if they knew he was invited. I'd also amor to an invite an animê lady in a quimono to a Bon festival. Perhaps Sakura from Sakura Wars or Kaorin from Rurouni Kenshin.
